The flesh of this mollusc, caught off our coasts (Pecten maximus), is renowned for its fine flavor with sweet notes. We cook it with a high percentage of fresh tomatoes. This contribution of acidity, accompanied by a few "drops" of cream to harmonize everything and it's perfect!!
